Our Classic Bushi is honkarebushi, made from bonito cut into four fillets and matured through repeated mold cultivation and sun-drying.In fiscal 2025, honbushi made using this method accounted for just 1.7% of katsuobushi production across the three main producing regions.Makurazaki’s share was just 0.6%.
