50g of thinly shaved Classic Bushi made from exceptionally fresh bonito using our own technique. Its orange hue accompanies a deep flavor and more inosinic acid, an umami component, than ordinary katsuobushi. Such fresh, rapidly frozen sashimi-grade fish has traditionally been considered difficult to process into katsuobushi. We give it extra time and care; residual sugars in the fish account for the orange color. Minister of Agriculture, Forestry and Fisheries Award at the 2025 Kagoshima fisheries product competition.
About Classic Bushi Honkarebushi is made by repeatedly cultivating a beneficial mold on smoked bonito and drying it in the sun. During every mold-cultivation stage, we play Mozart in the curing storehouse, hoping to encourage the culture. Classic Bushi combines this tradition with the time and care of our classic production methods.
