About Classic Bushi Honkarebushi is made by repeatedly cultivating a beneficial mold on smoked bonito and drying it in the sun. During every mold-cultivation stage, we play Mozart in the curing storehouse, hoping to encourage the culture. Classic Bushi combines this tradition with the time and care of our classic production methods.
Obushi and mebushi One bonito yields four blocks: two from the back (obushi) and two from the belly (mebushi). Belly blocks have slightly more fat and make a richer stock. Back blocks are leaner, shave neatly and produce a lighter, clearer stock. Repeated mold cultivation reduces fat in honkarebushi, so both offer a refined flavor.
